

Mercurey red 1988 - Louis Latour
Older vintages of Mercurey Rouge gain complexity and depth over time. As they age, the fresh fruit of the Pinot Noir gives way to more evolved notes of undergrowth, truffle, leather, and sweet spices, while maintaining an elegant and balanced structure. The tannins refine, the texture becomes more velvety, and the finish lengthens with a beautiful patina. These mature vintages are best enjoyed around 16–17°C, after a short aeration, and pair perfectly with slow-cooked meats, game birds, or mature cheeses, offering a rich and nuanced aromatic experience, a testament to the expertise and aging potential of the Mercurey terroir.
