Although the 1982 Canon isn't the most consistent of its vintage, the beautiful bottles offer remarkable brilliance. At its best, it reveals a seductive bouquet of ripe fruit, cigar leaf, black truffle, and damp earth. On the palate, it is fleshy, full-bodied, and textured, supported by a deep core of black fruit and a persistent, luscious finish, still marked by chalky tannins. A Saint-Émilion of character, to be enjoyed now or cellared through 2030.

Château Canon is best known for its red wines, made from Merlot, Cabernet Franc and, to a lesser extent, Cabernet Sauvignon. Merlot is the dominant grape variety, bringing richness, roundness and structure to the wines. Cabernet Franc adds complex aromas and elegant tannins, while Cabernet Sauvignon can add power and longevity to the wines.
Château Canon wines are characterized by elegance, finesse and balance. They offer aromas of ripe red fruit, blackcurrant and violet, as well as spicy, woody notes resulting from ageing in oak barrels. On the palate, the wines are generally silky, with well-integrated tannins and good acidity.
