Crozes-Hermitage White Les Hauts d'Eole 2019 - Cave de Tain
Geographical location: Northern Côtes du Rhône, left bank of the Rhône
Grape variety: 70% Marsanne; 30% Roussanne
Terroir: Fluvio-glacial alluvium in the southern part and presence of loess veneers
Climate : Continental with Mediterranean influence
Vinification: Selection of plots located in very qualitative terroirs, mostly old vines (45 years old on average). Each origin (homogeneous terroir unit) is vinified separately: gentle pressing of the grapes as soon as they arrive in the cellar and protection against oxidation as soon as the first juices run off. Selection of the juices by tasting. Cold settling for 24 hours. Alcoholic fermentation starts in vats at 18-20°C, followed by entonnage. 70% malolactic fermentation. Regular stirring of the lees in barrel.
Aging: In 400L barrels of 1 to 5 wines on fine lees for about 8 months
Tasting notes: Robe: pretty pale yellow with golden highlights. Expressive aromas of yellow fruit (apricot, nectarine), vine peach, acacia flower. In the mouth: notes of apricot, vanilla and roasted hazelnut due to the ageing process; mature with roundness. The finish is long and carried by a beautiful freshness.
Serve at 10 - 12°C
