GEOLOGICAL FEATURES
Above the Kimmeridgian subsoil of calcareous marls is a very clayey and quite deep white soil. The slope is not very marked.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance through regular ploughing.
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours at 15°C then fermentation in indigenous yeasts partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
It is a wine that is always very open. Its exposure to the sun gives it a very beautiful maturity. The minerality being often more discreet, it gives way to yellow fruit aromas (apricot, quince). Its clayey soil brings a lot of depth and length. The mouth is always rounder than tense with notes of ripe fruits. With time, the wine regains freshness but always keeps a very open and greedy style. It will go very well with prawns, a beautiful poultry in sauce, or even a pan-fried foie gras.
