Domaine Macle Côtes-du-Jura ‘Chardonnay sous voile’: This cuvée, 100% Chardonnay matured under veil, produced in only 3000 bottles, is to be considered a ‘petit vin jaune’. 

This is a rare and iconic cuvée from Domaine Macle, a leading producer in the Jura region and a master of aging under veil. This Côte du Jura Sous Voile embodies all the uniqueness of the great oxidative wines of the Jura, in a style of remarkable precision.

Made mainly from Chardonnay (and sometimes supplemented with Savagnin depending on the vintage), this wine is aged for several years in non-topped barrels, allowing a veil of yeast to develop naturally on the surface. This traditional process gives the wine a striking aromatic complexity: notes of walnut, curry, ripe yellow apple, dried fruit, and slight saline touches.

On the palate, it is a work of balance. Full-bodied and structured, it is carried by exceptional mineral tension and a lingering finish marked by iodine and spicy flavors. This wine is already fascinating today, but will continue to evolve gracefully for several decades.

A masterful pairing with mature Comté cheese, poultry in cream sauce, or morel mushroom risotto. A bottle for gastronomy, reserved for discerning connoisseurs and those curious in search of emotion.
