VINIFICATION : First sorting in the vineyard. Grain by grain manual destemming and sorting on the table. Putting in wooden vats of 30 to 70 hl by gravity. Pre-fermentation maceration at a low temperature of 8°C. Completely manual punching of the cap.

Maceration time: 30 to 40 days. Direct draining into French oak barrels by gravity. Malolactic fermentation in barrels. Ageing of 18 months in barrels.

TASTING : The Colour : The wine has a ruby red colour of good density, with brown, mahogany and tile reflections. Brilliance and limpidity are preserved. The disk is quite thick. The tears are fine and well marked, abundant and regular.

Nose : It appears at the same time expressive, frank and complex. All sorts of perfume families can be noted: fruity, floral and spicy.

The palate : The attack is frank, round and smooth, even caressing. Intense aromas first recall the complex sensations perceived on the nose. There is a scent of leather and slightly burnt wood, with hints of roasting. The beauty of the vintage reveals elegance, more than volume. The wine shows a beautiful aromatic amplitude. As for the finish, it is remarkably elegant.
