Single plot (2hectare 32ares 32centiares, half in production) of old Grenache noir gobelet vines on the southern slope of an east-west facing hillside. On clay-limestone bedrock, flowing red-blackish schists and mica-schists, with an exceptional iron content. Extreme climatic conditions. The plot is crossed more than 200 days a year by a glacial wind coming from the northwest. Late pruning. Intensive green work: disbudding, core pruning, load regulation, leaf thinning. Search for perfect phenolic ripeness while preserving maximum freshness and fruit. Hand-picking, storage and transport in refrigerated lorries. Maceration for 20 days with extraction by daily gentle pigeage. Drainage in new barrels. Ageing on lees, without sulphur until the end of the malolactic fermentation. Regular topping up with a Mouvèdre/Syrah blend (5 to 7% depending on the vintage). Bottled without filtration. An endearing, impressive wine, extremely changeable depending on the place and the occasion, evolving in the glass for several hours, with a breathtaking length and tight tannins of a memorable velvety smoothness. Maturity 10 years, ageing potential 30 years.
