"I had already tasted the Château Chalon 2011 “12 Years of Age” (or 12 years in barrel) last year, but Stéphane Tissot wanted to take the experience further: compare two bottles of this exceptional wine, one freshly opened and the other uncorked two weeks earlier. To make things more challenging, we also tasted two yellow wines from Triassic soils, to demonstrate that the latter gain complexity with oxidation and time in the glass, while Château Chalon expresses itself better immediately after opening. The wine is aromatic, very expressive, and open—a vintage perhaps a little less profound than 2010, but close in spirit to 2016. On the palate, we find the saline finish characteristic of Lias soils, a guarantee of finesse and balance. Whereas yellow wines from Triassic soils benefit from aeration, Château Chalon, while subtlety, reveals its immediate splendor: open and savor it without delay." – Luis Gutiérrez
Bénédicte and Stéphane Tissot's 2011 Château Chalon is a true work of art from the Jura region, a vin jaune of rare depth made from 100% Savagnin, aged for 12 years under a veil in barrels, without topping up. This long aging gives it an impressive aromatic complexity, dominated by notes of walnuts, curry, sweet spices, dried fruits, and saffron, with a saline and smoky touch that characterizes its terroir. On the palate, it is a powerful, taut, vibrant wine, with impressive volume and a long finish, driven by crystalline acidity and a noble bitterness. This Château Chalon exemplifies Stéphane Tissot's pure and demanding style: an emotional wine, both meditative and gastronomic, capable of lasting several decades without weakening.
It is made from the Savagnin grape variety, then aged under a veil for several years (here 12 years): that is, without filling the barrel, allowing a thin veil of yeast to form on the surface of the wine.
This process concentrates the aromas and consumes residual sugars, resulting in a completely dry, powerful, complex, and slightly oxidative wine.
