Clos du Mont Olivet 2015
Chateauneuf du Pape - Joseph Sabon
94/100 James Suckling
A superbly crafted wine, revealing an intensely perfumed nose of rose and red fruit. The purity of Grenache shines through. On the palate, it offers a fluid, balanced feel with a silky structure. Subtle, controlled power is also revealed. Best enjoyed from 2020.
TERROIR :
The grapes come from a wide variety of sites : Montalivet, La Crau, Les Blachières, Coste Froide, Bois Seneseau, Palestor, Bois Dauphin, Pied de Baud, Les Bousquets, Les Parrans, Les Marines. They are mainly located in the north and east of the appellation. The soils are mainly composed of quartzite colluvium, marine clay, sand, mollassic sandstone and pebbles.
VINIFICATION :
The bunches are harvested by hand, with a very severe sorting in order to select only the best berries. The choice of the date of the harvest is essential in order to be as precise as possible in the maturities. The vinification is then carried out with some pumping over and delestage without seeking a maximum extraction. Press juice and free-run juice are aged separately in concrete tanks and then blended after a few months and placed in vats, tuns, demi-muids and rooms. The percentage of containers varies according to the profile of the vintage.
- Maceration : 35 days
- Fermentation : 100 % in concrete tanks
- Maturation : 65% in foudre, 20% in concrete vats, 8% in steel vats and 7% in old barrels.
BLENDING :
78% Grenache noir - 11% Syrah - 8% Mourvèdre - 3% Cinsault
