The Jurançon Sec from Domaine Castera is a blend of Gros Manseng, Petit Courbu, Camaralet, and Petit Manseng grapes from plots located in Caubegt and Tauzy, facing southwest and east, on silty-clay, clay-limestone, and iron-rich gravel soils. The vines, planted between 1978 and 2016, yield approximately 40 hl/ha. The grapes are hand-harvested in October, only when perfectly ripe. Vinification involves slow pressing of whole bunches with indigenous yeasts, followed by aging in tanks and, for half, in oak barrels.
This dry wine is distinguished by its balanced, fresh, and vibrant style. Ideal as an aperitif, it also pairs beautifully with seafood, Bayonne ham, charcuterie, or fish rillettes. It can be enjoyed young for its vibrancy but also has an aging potential of 5 to 10 years. It is available in cases of 6 or 12 bottles, as well as in half-bottles.
