The blend comprises 35% Grenache, 30% Mourvèdre, 20% Syrah, 10% Carignan, and 5% Counoise. The grapes come from several emblematic terroirs of Cairanne – Cabanon, Chantale, Les Garrigues, Les Combes, Les Truffières, La Ridelle, and La Canarde – giving the wine great aromatic complexity and a natural balance worthy of a Côtes du Rhône Cru. The vines, aged between 40 and 70 years, are planted mainly on the hillsides above the village and at the foot of the slopes, facing due south. They are rooted in stony soils resting on a Miocene subsoil, with a controlled yield of around 25 hl/ha to preserve depth and concentration.
The wine is aged for ten months before a light sulfiting of 1.5 g/hl at bottling. A version without added sulfites is also available between December and March. After aging in an underground cellar until release, the wine reveals a deep red color with ruby highlights. Both the nose and palate express aromas of jammy red fruits, chocolate, and spices, supported by silky tannins. The palate, ample and smooth, lingers on a spicy finish marked by licorice, offering a seductive balance between richness and elegance. Aging potential: 7 years.
