- GEOGRAPHICAL SITUATION: The plots are located exclusively in Les Aubes and La Ponche, in Vacqueyras.
- AREA: 1.5 hectares.
- GEOLOGY: The soil at Les Aubes is composed of piedmont sands derived from the erosion of Miocene safre, enriched with micas from Alpine eruptive rocks, with a very low clay content. At La Ponche, the soil has a predominantly sandy matrix, mixed with fine clay particles from the Font des Papes cone.
- CULTURE: Organic (Ecocert certification) and biodynamic (Demeter certification).
- VARIETIES: 80% Grenache, 20% Syrah.
- AGE OF VINES: 60 years on average.
- HARVESTING & WINE MAKING: The grapes are harvested by hand, with sorting on the vine followed by table sorting. The grapes are partially destemmed, depending on the vintage and the plot. The grapes are vatted by gravity to preserve their integrity. Fermentation, which lasts 20 to 30 days, takes place in temperature-controlled stainless steel vats, with twice-daily pumping over and punching of the cap according to tasting. Pressing is carried out using a pneumatic press, followed by malolactic fermentation in vats. Clarification takes place over the winter, before the wine is matured in the spring.
- AGEING : The wines are aged for 18 months in 36 hectolitre Stockinger oak tuns and 8 hectolitre terracotta jars. The wine is bottled without fining or filtration.
- PERSONALITY: These wines are distinguished by their elegance and finesse, marking the expression of Grenache on sandy soils.
