- Geographical location : The plot is located exclusively in the area known as Le Pied de Baud, to the north of Châteauneuf-du-Pape, on the slopes of the Brusquières plateau. Bordered by woods, the vines enjoy views of a hundred-year-old oak tree and an old well.
- Surface area: 1 hectare.
- Geology: Predominantly sandy-clay soil, with a high proportion of clay. The slope is covered with rolled pebbles from an ancient terrace, embedded in a limestone matrix from the Safres.
- Farming: Organic (Ecocert certified) and biodynamic (Demeter certified).
- Grape varieties: A blend of Grenache (80%), Mourvèdre (15%) and Cinsault (10%) on mixed vines.
- Age of vines: 90 years on average.
- Harvesting and vinification: Hand-picked in crates, with double sorting (in the vineyard and on a sorting table). Partial destemming depending on the vintage and plot. Gravity vatting to preserve the integrity of the grapes. Fermentation in temperature-controlled stainless steel vats for 20 to 30 days, with twice-daily pumping over and punching down of the cap adjusted according to tasting. Pressing in a pneumatic press, malolactic fermentation in vats, then clarification in the cellar over winter. The wine is matured in the spring.
- Ageing: 18 months in 36 hectolitre Stockinger oak tuns and 8 hectolitre terracotta jars. Bottled without fining or filtration.
- Personality: These wines are characterised by a balance between spicy flavours, a powerful structure and a fleshy texture.
