" Un rouge solide, sérieux et dense, avec un parfum floral séduisant sur le fruit rouge, la saucisse fumée sanguine et la cendre de mesquite. Le caractère du Mourvèdre est révélateur, avec de la viande et une base minérale salée et en fonte. La garrigue chantante, les épices de boulangerie, le poivre blanc et une fraîcheur herbacée prononcée infusent le palais lourd, qui commence à peine à s'épanouir. Superbe. High above the mistral-blown hills, the Plateau terroir yields one of Domaine des Bosquets' most secret gems. This very low-yielding cuvée (12 hl/ha) is made from old Mourvèdre vines planted in 1922, alongside a few Grenache, Syrah, Clairette, and Cinsault vines. Growing on a Santonian blue marl and limestone soil, this high-altitude microclimate, alternating between sunny days and cool nights, creates a deep, refined, and unique wine.
A harsh terroir for a noble wine
The extreme conditions of the Plateau—northern exposure, stony soil, and marked temperature variations—forge a wine with a vertical profile, both intense and of rare finesse. The vines strive to produce little, yet with greatness: only 2,800 bottles and 100 magnums are produced each vintage. Custom-Made Vinification
The grapes are harvested by hand, late in October. They are vinified as whole bunches, vatted by gravity in open demi-muids. Maceration is long, punctuated by delicate manual interventions: gentle punching down and daily wetting. Aging then takes place for 18 months in used 600-liter barrels, promoting subtle integration without over-marking the wine.
Pairings & Service
Serve around 16°C, in large glasses. It will pair wonderfully with game dishes such as woodcock or venison, or with herb-roasted poultry.
