The vineyard :
The soil is composed of limestone tufa covered with a thin layer of clay. The cultivation philosophy adopted is Organic Agriculture, certified Ecocert in 2000.
Winemaking and aging process:
In the cellar, the grapes are carefully destemmed and go through a careful selection on a sorting table before being placed in the vats. Fermentations follow traditional methods, using indigenous yeasts after a cold pre-fermentation maceration. Vattings are gentle, lasting on average 20 to 30 days, with regular pumping over and punching down. The wines are then put into barrels or demi-muids, the proportion of new barrels varying depending on the vintages and vintages. The Gauthier family benefits from aging cellars located in ancient caves carved out of tuffeau, offering a stable and preserved environment with ideal temperatures for conservation. This specific vintage was aged in 2 and 3 wine barrels for 24 months and is bottled without filtration.
Tasting characteristics:
The color of this wine is an intense and deep ruby red. It releases powerful aromas of ripe black berries and gray pepper, with mineral nuances in the background. On the palate, the wine is remarkable for its bright fruitiness, its juiciness, its frankness and its delicacy. It coats the palate with striking elegance. The balance between concentration and mineral freshness is simply exceptional. The tannins are both solid and graceful, and the finish is impressively long. Le Clos Nouveau is a true treasure that will improve with time.
