Sylvain Pataille’s Bourgogne Blanc "Pinot Beurot" is one of the most distinctive and sought-after cuvées in the Côte de Nuits. A key figure in Marsannay and a staunch advocate of organic and biodynamic viticulture in Burgundy, Sylvain Pataille here showcases a historic yet little-known local grape variety: Pinot Beurot (the traditional Burgundian name for Pinot Gris).

 

Identity & Winemaking

Grape Variety: 100% Pinot Gris (Pinot Beurot).

Terroir: Plots located in the Marsannay/Chenôve area, on clay-limestone soils.

Philosophy: Certified organic and biodynamic viticulture; hand-harvested.

Aging: Natural winemaking (indigenous yeasts), gentle pressing, and extended aging on the lees in older oak barrels (avoiding dominant new oak influence) to preserve freshness and saline purity.

 

Tasting Profile

Appearance: Golden, sometimes with slight coppery or pinkish hues—characteristics derived from the colored skin of the Pinot Gris grape.

Nose: Intense and complex, blending white-fleshed fruits (pear, vine peach) and ripe citrus with floral notes, hints of smoke, sweet spices, and fresh hazelnut.

Palate: The attack is broad and textured, offering seductive richness and lovely roundness. This gives way immediately to sharp mineral tension and remarkable salinity on the finish—a classic signature of Pataille’s white wines.

 

Food Pairings

Fine fish dishes with cream sauce or roasted (monkfish, turbot).

Bresse poultry with cream and morel mushrooms.

Autumnal cuisine: mushroom risotto, pan-seared veal.

Aged hard cheeses (Comté, 18–24 months). This is a gastronomic white wine with excellent aging potential (easily 5 to 8 years)—far removed from opulent or overripe Pinot Gris—that shines thanks to its energy and Burgundian tension.

 

The 2023 vintage

It stands out for its harmony and natural poise. Following a warm but moderate summer, the wines show perfect ripeness while retaining lively energy. At Pataille’s estate, Marsannay’s cool terroirs delivered whites of fine density and refined acidity. Les Méchalots 2023 reveals ripe yet focused fruit, a saline length, and an elegant texture — a balanced, promising vintage built to age gracefully over time.
