Domaine Collet, located in Fontaine Denis, Champagne, showcases its vibrant southern terroir with the Pierre Noire cuvée. Made from old Chardonnay and Pinot Noir vines, this cuvée combines complexity and depth thanks to a perpetual solera system begun in 2012 and generous vinification in French oak barrels. The vines are in conversion, cultivated without herbicides or synthetic products, using natural methods including fermented extracts and plant decoctions.
Pierre Noire is distinguished by its meticulous production: no fining or filtration, fermentation, and partial aging in oak barrels, with a 40-month maturation period after harvest. With a dosage of 1 g/l (Extra Brut), it pairs perfectly with dishes such as sole meunière, moules marinière, salmon gravlax, steamed pork and shrimp ravioli, or yakitori. This vintage, composed of 80% Chardonnay and 20% Pinot Noir, offers an elegant and structured taste experience, ideal for dinner aperitifs and refined pairings.
