Domaine Collet, in Fontaine Denis, has produced the Wellington 2019, an exceptional cuvée crafted from a rigorous selection of old vines from the village's finest terroirs. This vintage, marked by a remarkable year, reveals fine and elegant bubbles, ideal for pairing with refined, traditional cuisine. Grown without herbicides or synthetic products, the vines are carefully tended and respectful of the environment, using natural practices such as fermented extracts and herbal decoctions.
The cuvée is made exclusively from the heart of the cuvée, with 40% fermented and aged in oak barrels, then aged for 60 months after harvest. A blend of 80% Chardonnay and 20% Pinot Noir, with an Extra Brut dosage (1 g/l), the Wellington 2019 offers great depth and mature maturity. It goes perfectly with refined dishes such as sea bream tartare with blood orange, veal blanquette, paupiettes or coq au vin blanc, thus enhancing the most gourmet meals.
