Vin de Paille is a particularly famous French wine, and is produced in several wine-growing regions, but one of the most renowned is Vin de Paille du Jura, particularly that of Château d'Arlay. This wine is characterised by its special production method, which involves drying the grapes after harvest.The grapes are spread out on racks (wooden mats) or hung up to dry naturally for several months, or even years.This technique concentrates the sugars and flavours in the grapes, producing a sweet nectar rich in aromas.The grapes used for Château d'Arlay Vin de Paille are mainly Savagnin, Chardonnay and Poulsard. These grapes are dried for an extended period, usually three to six months, before being pressed to extract the must. The must is then fermented slowly, leaving a high level of residual sugar in the wine.
TASTING
The result is a wine of great aromatic complexity, with notes of honey, candied fruit, nuts, citrus and flowers. It is very sweet, making it an excellent choice to accompany desserts, foie gras or strong cheeses.
