GEOGRAPHICAL LOCATION
The Côte Chalonnaise extends from the Côte de Beaune to the south of Santenay. The region has five village appellations, with Mercurey, to the north, still the most famous.
CHARACTERISTICS
The vineyards surround the village, benefiting from varied exposure, from south to east/north-east. Geologically, Mercurey's soils are a continuation of those of the Côte de Beaune.
VINIFICATION AND AGEING
The grapes are harvested by hand in small crates to preserve the integrity of the fruit. The vats are regularly punched twice a day during fermentation. The wine is aged for around 18 months in barrels from our cooperage, around a third of which are new.
