GEOGRAPHICAL SITUATION
Gevrey Chambertin is a commune in the north of the Côte de Nuits. It has 26 premiers crus and 8 grands crus. Half of the premiers crus surround the grands crus (towards Morey), the other half is in the North towards the combe de Lavaux, with limestone and clay soils.
CHARACTERISTICS
The vineyard "Les Cazetiers" is located at the beginning of the Combe de Lavaux fault, superbly exposed to the South-East, approximately at the same author as the Clos Saint-Jacques. The soils are clay-limestone, slightly stony.
VINIFICATION AND MATURATION
The grapes are harvested by hand in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. The maceration of the grapes takes place in open wooden or stainless steel vats or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during the fermentation. The maturation lasts about 18 months in the barrels of our barrels of our cooperage of which a third are new. new.
