Geographic location
The Côte Chalonnaise extends the Côte de Beaune southward, beyond Santenay. It comprises five appellations: Bouzeron (Aligoté), Rully, Mercurey, Givry, and Montagny. The Givry vineyard extends around the eponymous village and its three hamlets: Poncey, Cortiambles, and Russilly.
Terroir characteristics
The soils are predominantly brown calcareous or calcic, resulting from the alteration of Jurassic limestone. This geological configuration gives Givry wines a beautiful finesse, often compared to that of Volnay wines, while also providing suppleness and depth.
Vinification and Aging
The grapes are harvested by hand in small crates to preserve their integrity, then carefully sorted and destemmed. Maceration takes place in open wooden or stainless steel vats for 3 to 4 weeks, with two daily punching downs during fermentation. Aging then continues for approximately 18 months in oak barrels from our own cooperage, approximately one-third of which are new.
