Tasted by Neal Martin in 2016: "The 2015 Volnay 1er Cru Les Santenots showed a subtle pastry perfume on the nose, a hint of baking powder behind the veneer of raspberry and strawberry coulis aromas. The palate is quite powerful with a slightly grainy texture, a mix of red and black fruits leading to a sappy and quite taut finish."
LOCATION
Volnay is located in the center of the Côte de Beaune, bordered by Pommard to the northeast, Monthélie to the west and Meursault to the south. The southeast facing vineyards produce only red wines and 26 Premiers Crus.
INFORMATION ON THE VINEYARD
The soil is extremely fine, limestone, rich in calcium and gives the lightest and most delicate wines. The vineyard, where most of the Premiers Crus are located, is much more chalky, with a thin iron-rich layer covering a solid subsoil. "Les Santenots" are located on a red chalky and stony soil, on a gentle slope.
VINIFICATION AND MATURATION
The destemmed grapes are fermented in vats for 3 to 4 weeks. Aging takes place in oak barrels produced by the Cadus cooperage for 18 months.
