Pommard 2016 in Magnum - Joseph Faiveley
THE THOUSAND
In 2016, weather conditions were contrasted. The harvest was late in order to pick perfectly ripe grapes. Our wines have very greedy fruity aromas. They are particularly fond wines. The vintage promises to be very typical.
CHARACTERISTIC OF THE APPELLATION
Neighbouring Beaune, the village of Pommard is one of the most famous in the Côte de Beaune. Its vineyard, steeped in history, has been famous for a very long time.
Exposure: North-East
Soil: Clay and limestone
Grape variety : Pinot Noir
VINIFICATION & MATURING
The grapes are cut and sorted by hand. The proportion of destemming varies according to each vintage. Daily punching down is carried out to extract the colour, tannins and aromas from the skins of the grapes. After 19 days of vatting, alcoholic fermentation is completed. The free-run wine is run off by gravity while a slow and gentle pressing of the marc allows us to obtain a press wine of great purity. For 12 months, our wines are aged in French oak barrels (20 to 30% of which are new) in our cellars at a natural and constant humidity and temperature. These barrels are selected for the finesse of their grain and their moderate toasting. The end of the ageing process is carried out in vats for 2 months.
TASTING
Beautiful dark ruby colour. The nose exhales aromas of black fruits and spices accompanied by woody and smoky notes. The entry of mouth offers a powerful substance with present and well coated tannins accompanied by pleasant woody notes. This wine has a beautiful structure and a good aromatic persistence, which gives it an interesting ageing potential.
Serve with: Marinated meats, game, braised ham, hare terrine.
Temperature: 14°C to 16°C
