GEOGRAPHICAL LOCATION
Chablis is the northernmost part of Burgundy halfway between Dijon and Paris. This region enjoys a continental climate (very cold in winter and hot hot in summer with frosts in spring). The soils are marly and give a unique character to the character to the wines of Chablis. The vineyard represents 3 500 hectares of which 856 hectares are Premiers and Grands Crus.
CHARACTERISTICS
7 climates are entitled to the Grand Cru appellation in Chablis: Preuses, Bougros, Les Clos, Grenouilles, Blanchot, Valmur and Vaudésir. These parcels are all located on the located on the right bank of the Serein river, on a hill hillside.
VINIFICATION AND MATURATION
After a gentle pressing, a part of the juice is fermented in double rooms of 456 liters. Another part is vinified and aged in stainless steel tanks. The ageing lasts from 13 to 15 months on lees before the preparation of the bottling.
Serving temperature : 12-14 C°.
Ageing potential : 5 to 15 years, depending on the vintage.
