THE VINEYARD : This climate lies at the western end of the terroir of the Grands Crus, at an altitude varying from 130 to 170 m, on a fairly deep soil of marl and clay with a south-western orientation. One finds in the wines of this appellation a structure in the mouth that is always very rich and unctuous.

TASTING NOTE: Rich bouquet with intense mineral notes. Full, round, firm and massive on the palate.

THE PERFECT AGREEMENT: Breton lobster salad.
SERVICE TEMPERATURE: Between 12°C and 14°C
VENDING: Manual.
VINIFICATION : Use of the principle of gravity to avoid any pumping over that could be detrimental to the quality of the wine. Pneumatic pressing of short duration (1h30 to 2h00) for a delicate separation between the solid and liquid parts of the grapes. Very light static settling in order to preserve enough fine lees to allow the alcoholic and malolactic fermentations to take place naturally. The must is put into French oak barrels (on average 6 years old) for 50 to 60% of the cuvée. The balance is vinified in small stainless steel vats.
AGEING: 14 to 15 months, including 5 to 6 months on fine lees in French oak barrels for 50 to 60% of the cuvée. The ageing is finished in small stainless steel vats.
