VINEYARD AND TERROIR:
The vineyard was planted 40 years ago on a surface of 1.19 hectares. It is exposed on the South / South-East slope of this combe. The terroir is clay and limestone, predominantly limestone. The yield is about 35-40hl/hectare.
VINIFICATION:
We harvest by hand, always late, in 25kg boxes. The grapes are sorted and we carry out a pneumatic pressing of whole grapes, followed by a light settling of the must, without adding any sulphur. Fermentation takes place in 228 litre barrels, without any stirring. We use very little new wood. It is a long fermentation (4 to 8 months), with indigenous yeasts.
MATURATION AND BOTTLING:
We age our wines on lees for 12 to 15 months, without stirring. Bottling takes place after the second winter, with light filtering if necessary.
