The Lavaux St Jacques Plot is located in the northern part of the village of Gevrey, just before the coomb. The origin of the name of this climate would come from "La Val" which in the Middle Ages designated a depression in the relief, a topographical hollow. With "Les Cazetiers" and "Clos Saint-Jacques", this climate is considered as one of the 3 best Premiers Crus of Gevrey. The Domaine acquired this parcel at the end of 2013.

Characteristics of the plot of Lavaux St Jacques
Area: 0 ha 98 a 66 ca (2.44 Acres)
Year of planting: 1945, 1967, 1968, 1986, 1993
The grapes are cut and sorted by hand. The proportions of the destemming and the whole harvest vary according to each vintage. A daily pigeage is carried out to extract from the skins of the grapes their colour, tannins and aromas. After 19 days of vatting, the alcoholic fermentation is completed. The free-run wine is run off by gravity while a slow and gentle pressing of the marc allows us to obtain a press wine of great purity. For 16 months, our wines are aged in French oak barrels (of which 40 to 50% are new and 50 to 60% are 2-wine barrels) in our cellars at a natural and constant humidity and temperature. These barrels are selected for the finesse of their grain and their moderate toasting.
Goes well with: Game, rack of lamb, pigeon in a casserole, beef bourguginon.
