The estate tells you about it
Tasting notes : A beautiful ruby red colour, very elegant. A basket of blackberries and blackcurrants with hints of grilled dried fruit gives you a frank and direct nose. The palate is fresh with tension and a pulpy finish, a wonderful taste of morello cherries.
Food and wine pairing: Duck breast with cherries.
Winemaking method: The grapes are picked by hand, sorted and vinified with 80% whole harvest. During the 17 days of vatting, between 5 and 7 punching of the cap on the feet are carried out, as well as pumping over. After pressing, the wines are racked for 2 weeks and put into barrels. 40% of the wines are aged in new barrels and 60% in 1, 2, 3 year old barrels. After 14 months of maturing, the wines are racked into vats, rested for 3 months and bottled without filtration or fining.
