Tasting by Neal Martin in 2015: "The 2014 Morey Saint Denis 1er Cru Allouettes has a cold metal, copper, fruity (red berry) bouquet. The palate is quite harmonious on entry. There's a taut line of acidity here, clean and crisp, very linear with touches of bitter cherry towards the finish. There's something 'moody' about this Morey-Saint-Denis, which may well be its way of saying that it needs cellaring for 3-5 years."

Tasting and pairings: true to its "Côte de Nuits" origins, i.e. masculine, powerful and full on the palate, the red Morey-Saint-Denis is best enjoyed with meat of character. Its tannins will enhance a wild bird more than a young veal. Game, when braised or roasted, will be caressed by its fleshy texture and its sustained tannins will resist until the juices of these musky meats are completely extracted. These same tannins will give all its relief to a beautiful entrecote or a thick rib of beef. Cheeses with a washed rind will also find a partner of character that can be enjoyed.
