TASTING NOTE: A complex bouquet of fruit and flowers with a light toasty touch a slight touch of toast. On the palate, it combines a very harmonious blend of smoothness and race. Good ageing potential.
FOOD & WINE Pairings: Fish, seafood and shellfish in sauce.
TEMPERATURE : Between 12°C and 14°C
AGING POTENTIAL : 5 to 7 years and more
HARVESTING : By hand, in small boxes of 13 kg. Careful manual sorting of each bunch.
VINIFICATION: Pressing takes place in two phases: evacuation of the first juices, then pressing in two-hour cycles.
AGEING: 9 to 10 months in French oak barrels, with up to 15% new barrels depending on the vintage, then 3 to 4 months in stainless steel tanks.
AGEING: The cellars of the Bastions of the old Château de Beaune offer natural environmental conditions perfectly suited to the ageing of Premiers Crus.
