Saint-Aubin 2018 - François Carillon
Precise and respectful cultivation of the vine is essential to produce high quality grapes, an indispensable condition for the elaboration of elegant and gourmet wines.
Since 1992, all the plots are weeded mechanically (by tractor or horse); no herbicides are used. A sign of consistency over the years, the same vineyard manager has been leading the vines for more than 3 decades. Thanks to the knowledge that this continuity engenders, specific actions are undertaken for each plot so that the vines draw from the terroir its own characteristics. In order to concentrate and preserve this knowledge, the estate aims for a high degree of autonomy and therefore has very little recourse to service providers to carry out the necessary work, in the vineyard as well as in the cellar.
Respect for the environment is one of the fundamental values to which François Carillon is attached.
Thanks to integrated pest management, very few inputs are used and the rare treatment products (fungicides) are of natural origin (strobilurins, substances extracted from a fungus). Treatments are carried out only when they are absolutely necessary (strong cryptogamic attacks for example).
