Tasted by Joe Czerwinski on September 10, 2020: "Tasted last year from the single new Stockinger foudre, the 2018 Ventoux Divergente is more red-fruited than the 2017 or 2019. Pencil shavings frame the raspberry notes on the nose, while the palate is medium-bodied, with a ripe, creamy texture, but also a crisp edge on the crystalline finish."
- Exceptional wine: This cuvée is only produced on exceptional vintages and in limited quantities. Soil, subsoil, micro-climate, unique exposure in search of perfection.
- Terroir : The Fondrèche plateau is made up of ancient alluvial deposits. The soil is very stony (rolled pebbles, flint and crystalline) and chalky from the surface with a sandy-clay texture.
- Grape variety: A plot of Vieille Syrah planted in 1955 exposed to the rising sun.
- Vinification & ageing: Traditional, 21-day vatting period with only a few small punchings of the cap.
- Ageing: 12 months on lees in tuns and barrels. Bottled on the fruit day.
- Tasting: The colour is dark purple. The nose starts with a bouquet of black raspberries, blueberries, spring flowers, violets followed by a light toasted note. The palate is opulent without being heavy, voluminous without excess, the tannins present but silky. A pure, elegant wine.
- Food and wine pairing: Rabbit stew with cooked carrots
