Technical details
Surface : 6.96 ha.
Soil : clay and limestone on the Saint-Emilion plateau.
Grape varieties: 85% Merlot, 8% Cabernet Franc, 7% Cabernet Sauvignon.
Average age of the vineyard: 35 years.
Vineyard management: The soils are worked. All the green work is done by hand (disbudding, leaf removal, thinning out). Reasoned use of phyto-sanitary products in order to protect the environment.
Harvest: 100% manual on October 5th (young Merlot vines), October 14th (Merlot), October 17th (old Merlot vines), October 20th (Cabernet Franc) and October 24th (Cabernet Sauvignon plant).
Yields: 30 hl/ha.
Vinification: Sorting by densimetry. Cold pre-fermentation maceration. Pigeage. Malolactic fermentation in barrels.
Vats: Thermo-regulated tronconic double-walled stainless steel vats & thermo-regulated wooden vats.
Ageing : 80% new barrels (French oak) for 12 to 18 months.
Blend presented : 85% Merlot, 5% Cab. Franc and 10% Cab. Sauvignon.
Alcohol content : 14.5% vol.
Estimated production : 28 000 bottles of 1st wine.
