- There is exceptional finesse and elegance in Chateau Chalon, a wine made from exceptional Triassic clay soils in the best known terroir for Savagnin to be aged under a veil of yeast.
- The wine was aged in untouched and never replenished barrels, and the barrels were kept in two different types of cellars: 60% in a dry, warm cellar and 40% in a cool, damp cellar, to achieve a blend of styles that combines the most oxidative with the most organic aromas.
- There are all the classic descriptors, iodine and paraffin, dried morels, curry and green nuts, but in a very subtle and elegant way. The palate is velvety and even, fresh and light but with pungent and persistent flavours. It finishes with a salty and very savoury note. It is truly exceptional. It seems that Chalon de Tissot is getting better and better...
