- Vineyard management: Biodynamic vineyard, Ecocert certification and Demeter control. The vines are cultivated without weedkillers, chemical fertilisers or synthetic products. The winegrowers use copper and herbal teas to treat the vines for sulphur.
- Vinification: 60% whole grapes without sulphur. 40% destemmed with a little sulphur Maceration in wooden truncated cone vats for 2 weeks. Aged in 30% new barrels for 1 year
- Tasting notes : Very present red fruit notes, complex and structured wine with fine tannins.
- Food pairing : Cheese, red meat, duck, venison.
