  • A wine of winegrowers, at least intrinsically bearing the competence of each, the pride of the beautiful work and the most beautiful expression of its soil possible.
  • 60 ares 3 parcels "Grape varieties: Pinot Noir, Gamay
  • Soil : brown calcareous soil, not very thick
  • Label: Certified organic and biodynamic, indigenous yeasts, very little sulphur.
  • Harvesting: exclusively by hand, at full maturity, with sorting of the grapes.

The estate tells you about it: 

"Latin phrase: "a minima" literally means: "to call for a very small penalty".

The idea of this wine was born from a simple observation freely inspired by Mr. Jules Chauvet* 1960: "Sulfiting the harvest is not advisable knowing that yeast and intracellular fermentations ensure the best results in the absence of SO2". a minima is a reflection of the place where it was born, the winemaker helps its birth and accompanies it.

The way of respecting the grape is pushed to its paroxysm here. Intense work is done before the harvest (biodynamics...) and during the harvest (manual harvest, sorting, use of gravity...). Once the grapes are in the vat, we do not use any sulphur and the fermentation starts naturally.

The 2020 vintage

It has proved brilliant here: as elsewhere along the Côte, the wines are more primary than their 2019 counterparts at the same stage, and tighter, displaying deep, saturated hues, vibrant fruit cores and ripe tannins. While not in the least austere, they will require some patience to realise their potential - but what potential! Boosted by the growing involvement of his sons, Pierre and Louis, Jean-Louis Trapet has initiated a viticultural revolution: in 2020, seven whole hectares of the estate's vineyards were converted to both trellises and higher posts and wires, depending on the steepness of the slope. Since then, the changes have been rolled out to other plots. And given the extent of Trapet's operation in the best climates, this means that the walk from Morey-Saint-Denis to Gevrey-Chambertin suddenly has a different face. In the winery, the vinification remains very classical, with large percentages of whole bunches. There are also more small cuvées, including a Gevrey-Chambertin 1859, made from old vines in a place called Champerrier, and a bottling of Gevrey-Chambertin 1er Cru Aux Combottes.
