La Pie Tome 6 is a pure, singular expression of Gaspard Brochet’s meticulous craftsmanship, fashioned exclusively from Chardonnay grown in the "Les Prés Mousseux" *lieu-dit* within the Écueil Premier Cru terroir. This plot is distinguished by a rare and precious geological makeup: black clay soils combined with underground water sources. This unique combination nourishes the vines in a distinctive way, lending the resulting Champagne remarkable depth, freshness, and a highly individual aromatic profile. True to a philosophy of artisanal excellence and minimal intervention, the winemaking process relies entirely on gravity flow at the estate, avoiding any rough handling to preserve the juice's original purity and finesse. Fermentation and aging take place in small oak barrels. To allow the wine to express itself with total freedom, Gaspard Brochet makes the exacting choice to forgo fining, racking, filtration, and topping up (*ouillage*).
