Age of vines
Around 50 years old - mature vines offering complexity and aromatic depth.
Geology & terroir
The vines are located in the commune of Puligny-Montrachet, just below the Puligny “Les Champ Gain” appellation.
The soil is poor and very stony, on a gently sloping hillside facing east-west.
The vines are Guyot-pruned, with meticulous attention paid to green harvesting: disbudding, trellising and topping.
Vinification & Maturing
Harvesting & pressing
Hand-picked, with meticulous sorting on the vines, then in the winery.
Slow pressing using a pneumatic press to obtain a fine, delicate extraction.
Ageing
After light settling, the must is transferred to 228-liter French oak barrels (15% of which are new).
Alcoholic and malolactic fermentations take place naturally, thanks to indigenous yeasts and bacteria.
Aging is long and precise, on fine lees for 18 months, without stirring.
A month before bottling, the wines are blended in stainless steel tanks, racked, lightly fined and filtered. Bottling follows the lunar calendar.
Tasting
An elegant, refined wine, with subtle aromas of white flowers and toasted hazelnuts.
On the palate, a lively attack gives way to a fine, extended texture. The wine reveals great energy, a marked mineral imprint.
