Origin and Terroir
This Puligny-Montrachet comes from 40-year-old vines planted on some of the village's finest plots: Les Tremblots, Rue aux Vaches, Les Houillères, Les Paupillots, and Les Nosroyes. The soils are composed of brown limestone and clay-limestone marl, deeper at the top of the slope and finer at the bottom. The vines are trained in Guyot with meticulous care: debudding, trellising and canopy trimming.
Winemaking
Harvesting is done entirely by hand, with double sorting—first in the vineyard, then at the winery. A gentle pneumatic pressing allows slow and respectful juice extraction. After light settling, the juice is transferred into 228-liter French oak barrels (15% new). Both alcoholic and malolactic fermentations occur with indigenous yeasts and bacteria.
Ageing
The wine is aged for 14 months on fine lees without bâtonnage, preserving elegance and precision. One month before bottling, the barrels are blended in stainless steel vats. A light racking is followed by fining and gentle filtration. Bottling is carried out according to the lunar calendar.
Tasting Notes
The nose is intense and refined, revealing notes of fern, hawthorn, ripe grape, almond paste, hazelnut, citronella, and green apple. With age, buttery, honeyed and mineral aromas (flint, gunpowder) emerge. The palate is both concentrated and harmonious, promising excellent ageing potential.
Food Pairings
Serve around 12°C. A perfect match with seared foie gras, creamy poultry, roasted lobster, or grilled sea fish.
