VINE AND TERROIR

0.42 hectares

Vines from 15 to 50 years old

Soil with calcareous brown topsoil

Yield: 35-40hl/hectares


VINIFICATION

Hand picked, 25kg crates,

grapes sorted, destemmed, not crushed, and

transfered into vats using gravity.

Vinification in truncated cone-shaped wooden vats of

small volume (25 hectolitres), native

yeasts, vatting for 18 to 25 days, moderate

punching.


MATURING

BOTTLING

Maturing in cold cellar, 50 to 80% new barrels,

on lees (16 to 18 months)

Racking one month before bottling

No filtration, no fining

All the bottles offered on the site are in stock and available immediately. Cylinders are sold individually with no minimum order. Delivery costs are fixed: whatever the number of bottles you order.
