THE VINEYARD : On the Côte des Vaillons, there are 8 different places called "lieux dits différents" which can be at the origin of this appellation.
GROWTH OF VINEYARD : Chardonnay
GROUND OF THE APPEAL: Clay and limestone with a predominance of limestone
AREA SURFACE :3.65 hectares
AREA OF APPELLATION : 104 hectares
PARCEL ORIENTATION: Southeast
A pronounced nose of fruit and flowers, with a nice freshness and a few mineral touches. Generous and refined on the palate, with a nice roundness.
Food pairing: Fish, seafood, creamed or grilled shellfish. Poultry and creamed or grilled white meats.
THE PERFECT AGREEMENT: Pan-fried scampi with citrus fruits.
SERVICE TEMPERATURE: Between 12°C and 14°C.
VENDING: Manual.
VINIFICATION : Use of the principle of gravity to avoid any pumping over that could be detrimental to the quality of the wine. Pneumatic pressing of short duration (1h30 to 2h00) for a delicate separation between the solid and liquid parts of the grapes. Very light static settling in order to preserve enough fine lees to allow the alcoholic and malolactic fermentations to take place naturally. The must is put into French oak barrels (on average 6 years old) for 40 to 50% of the cuvée. The balance is vinified in small stainless steel vats.
MATURING: 13 to 14 months including 5 to 6 months on fine lees in French oak barrels for 40 to 50% of the cuvée. The ageing is finished in small stainless steel vats.
