By William Kelley in 2021: "Disgorged on July 10, 2020, with a dosage of three grams per litre, Bollinger's much-anticipated 2007 Extra-Brut R. D. is gorgeous, unfolding in the glass with aromas of crisp orchard fruits, citrus peel, and white flowers intermixed with notes of honey, orange oil, buttery pastry, English walnuts, and delicately spicy bass notes. Full-bodied, vibrant and incisive, it is unusually elegant and structurally well-built for what is usually one of the most muscular cuvees in Champagne, with bright acidity wrapped around vibrant, concentrated fruit, complemented by a pearly mousse and an intensely sapid finish. Long and penetrating, this is a tightly wound R. D. tightly wound that will reward bottle age."
R.D. for "Récemment Dégorgé (Recently Disgorged)": it was in 1967 that Madame Bollinger created this
mythical cuvée, offering the world the opportunity to taste a champagne that has been aged
on the lees to the extreme.
Caution, the wooden boxes sold on the website are not adapted to the format of the Dom Perignon bottles.
