Originally, it was the red wines that made the reputation of the Champagne vineyards. Favourite wines of Henri IV, the Pinot Noir wines of the commune of Aÿ were the most prized at the French court. The Côte aux Enfants comes from a steep plot on the outskirts of Aÿ. It was Jacques
Bollinger who patiently rebuilt it at the beginning of the 20th century, when more than fifty owners shared it! Bollinger is now the owner of the 4 hectares of this single piece of land. Since 2009, the vineyard has been ploughed according to the principles of organic agriculture. A small production reserved for the greatest vintages.
