The Moulin-à-Vent “La Salomine” from Château de Beauregard is made from the Gamay Fin (Nicolas) grape variety, grown on sandy pink granite soils at an altitude of 400 meters, with excellent southern exposure. This high-altitude terroir promotes balanced ripening of the grapes and gives the wine the finesse, freshness, and aromatic intensity characteristic of great Moulin-à-Vent wines meant for aging.
The winemaking process relies on short macerations in truncated conical wooden vats to preserve the elegance of the fruit, followed by aging for nine to twelve months in oak barrels. This approach results in a refined structure while developing complexity and depth, giving the wine significant aging potential, estimated at ten years or more.
On the palate, the wine displays a brilliant ruby color and an elegant bouquet blending floral notes of peony and faded rose, fresh black fruits such as blackberry and cherry, as well as spicy hints of white pepper. The palate is intense and complex, carried by ethereal fruitiness and a silky texture, with a long and harmonious finish. The whole expresses a very Burgundian style, at once powerful, elegant and refined.
