A lively, precise Crozes-Hermitage with beautiful texture. The nose opens with aromas of black cherries, black pepper, violet flowers, and a hint of roasted meat. The medium-bodied palate is supported by fine tannins. A refined, agile wine with a flavorful and persistent finish. Made from organically grown grapes. Drink now or cellar.
VINIFICATION
For the vinification, the grapes are 100% destemmed, there is no yeast. The maceration phase lasts from 3 to 4 weeks. There is very little pigeage, I prefer pumping over which is a gentler way of extracting. The temperatures of the vinification are also measured: 20 to 28 °C maximum. After devatting, the wines remain in vats for 10 months. This wine does not know wood to be on a register of fruit and balance.
TASTING
- A fairly concentrated and rich bottling, Yann Chave's Crozes Hermitage offers flavors of espresso, blackberries and black olives. It's tannic but ripe, with licorice and plum notes on the long finish.
AGING
This wine is pleasant to drink now but can also be kept for 5 to 10 years.
