- 60% Mourvèdre, 20% Grenache, 20% Cinsault
- A unique and singular clay-limestone soil from the Trias, which gives minerality, freshness and ageing, just like the red, with which the rosé also shares the same grape varieties.
- Organic cultivation of origin, organic life of the soil preserved, natural grassing.
- Strict selection of the best grapes, yield control (35 hectoliters/hectare). Hand harvesting and sorting of the grapes
- Potential of evolution and ageing, 15 years and more
TASTING NOTES
- Under a dominant of pink grapefruit and citrus zest, one can distinguish subtle perfumes of rose heart, passion fruit and raspberry candy.
- The power of its bitters melts into its great savory complexity that prolongs the tasting with a retroolfaction full of exoticism.
- Serving temperature 10 -12 °c
SERVE
- When: Explosive and saline, provides immediate pleasure but also an incredible evolution (15 years or more)
- With what : Rosés are great allies for the pleasures of the table, delicious as an aperitif with cold meats (e.g.: country terrine with pickles) and all types of cuisine: Provençal, exotic, fish, barbecued meats, etc...
