Côtes du Jura Savagnin “Sur Le Muant” – Domaine des Marnes Blanches
The “Sur Le Muant” Savagnin cuvée from Domaine des Marnes Blanches—produced using organic farming methods by Pauline and Géraud Fromont—comes from an exceptional terroir in the commune of Sainte-Agnès. Planted on steep slopes with a geological composition of iridescent and grey marl, the Savagnin vines draw an intense minerality and a rare, saline quality from the soil. Vinified in a “floral” or *ouillé* (topped-up) style—without the development of an oxidative veil—the wine retains its original purity and freshness. It opens with a complex nose of ripe citrus (candied lemon, pink grapefruit), mountain flowers, and fresh almonds, accented by delicate stony and smoky notes. On the palate, the wine is marked by a direct, assertive entry, impressive volume, and a vibrant acidity that carries the finish toward refined, noble bitter notes and a lingering saline sensation.
