This collection brings together naturally sweet wines made from Muscat de Rivesaltes, aged for several years in barrels and demijohns. These wines develop complex aromas of dried fruit, cocoa, spices, and rancio, characteristic of aging wines. Description: Muscat de Rivesaltes is a naturally sweet wine made from Muscat d'Alexandrie and Muscat Petits Grains. Traditionally bottled young, it can be enjoyed both young and after some aging. For this Collection of Old Vintages, the oenologists at Domaine Cazes experimented with aging in foudres and vats in an oxidative environment, resulting in an exceptional, rich and complex Muscat de Rivesaltes.
Grape Varieties: Muscat d'Alexandrie and Muscat Petits Grains
Vineyard: The estate covers 185 hectares, spread across varied terroirs that inspire experimentation and diversity. The vines are ideally located between the terraces of the Agly, straddling Rivesaltes and Salses-le-Château.
Soil type: Clay-limestone
Vinification: Three methods used depending on the vintage:
- Direct pressing, fermentation at 18°C after settling, liquid-phase fortification midway through fermentation.
- 24-hour skin maceration at low temperature, followed by fermentation at 18°C and liquid fortification.
- Whole harvest destemmed and vatted, fermentation at 20°C, solid-phase fortification.
Aging: Barrel and vats in an oxidative environment, guaranteeing a rich, deep Muscat with great aromatic complexity.
Serving instructions: Serve around 16°C
