Vinification: 100% de-stemmed and then received in stainless steel tanks by gravity, the berries are then put in vats for a pre-fermentation cold maceration of 5 days (12°). The fermentation is natural with the indigenous yeasts present on the grapes and in the vat room.

Alcoholic fermentation: in vats and malolactic fermentation in barrels. Very little punching down of the cap, the raising of the cap is privileged daily at a rate of 2 per day. Devatting after 12 to 15 days then pressing.

Service: To be drunk slightly chilled, 16° either young on the fruit or more evolved, 4 to 6 years for its complexity.

Tasting : Although it comes from old vines, we make a fond, greedy wine with notes of fresh fruit, with a smooth, unctuous texture. The wine opens in its first year, the maturing does not mark it to remain elegant. It is a wine of pleasure that can be enjoyed in its first years.
